Dark red colour with red hues. White pepper and dark cherry aromas and flavours in harmony with the velvety tannins. The palate is subtle, textural with a perfect natural acidity. Very long finish.
Winemaking
After careful selection at the vineyard, most of the fruit was de-stemmed with about 20% included as whole bunches, into open fermenters and fermented with wild yeasts. It was then pressed into new French barriques (10%) and older French barriques. The wine was aged in barriques for 14 months then filtered before bottling. No fining. Vegan friendly.
